Spinach Salad with Berries and Curry Dressing

  • 6 ounces fresh spinach
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 small red onion, thinly sliced
  • 1/2 cup chopped pecans


  • 2 tablespoons balsamic vinegar
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 teaspoon curry powder
  • 2 teaspoons Dijon mustard
  • Freshly ground pepper to taste

Directions: In a medium service bowl, add all salad ingredients and lightly combine.  In a small mixing bowl, add all dressing ingredients and blend wel.  Pour dressing over salad and gently toss.  Serve immediately.


Yield:  2 servings
