3 C corn kernels
1.5 T smoked paprika
Salt to taste
1 T ground cumin
2 T sunflower oil or butter
1 C diced bell pepper
3/4 C diced red onion
½ C thinly sliced green onion
1 C cubed Crave Brother’s Oaxaca
1 C sour cream
2 T your favorite hot sauce
(adjust depending on heat preference)
1 C packed, minced cilantro
2 T lime juice
1 C shredded Crave Brother’s Farmer’s Rope
2 T minced garlic
½ C high quality mayo
3 slices Crave Brother’s Fresh Mozzarella
Preheat oven to 400 degrees.
Sauté in skillet or roast corn in oven with smoked paprika, 2 t. of salt, ground cumin, and your butter or oil until aromatic.
Combine diced bell pepper, red onion, green onion, cubed Oaxaca, sour cream, hot sauce, minced cilantro, lime juice, shredded Farmers Rope, minced garlic, mayo and sautéed corn in a bowl.
Add delicious mixture into a baking dish for the oven.
Layer slices of Fresh Mozzarella on top of dip and put in oven. Bake for about 20-25 minutes until top cheese is bubbling and browned a little bit.
Serve with corn chips as is, or doll it up with a few green onions, cilantro, and tomato on top! Leftovers are great in burritos.
