Lemon Garlic Mascarpone Naan Pizzas

About the Recipe

This pizza uses both Fresh Mozz and Mascarpone!


12-ounce package Naan breads (4 breads)

Pizza Sauce:

4 ounces Crave Brothers Farmstead Mascarpone Cheese

4 cloves garlic, crushed

2 tablespoons fresh lemon juice

1/2 teaspoon salt

1/2 teaspoon fresh ground pepper

Pizza Toppings:

1 pound uncooked medium shrimp (20 -25 per pound), deveined, shelled, tails off

1/2 cup red onion, chopped

1/2 cup cilantro, stemmed and chopped

2 tablespoons fresh lemon juice

2 cloves garlic, crushed

2 teaspoons chili powder

1 teaspoon ground cumin

1/4 cup plus 2 tablespoons olive oil, divided

1 leek, trimmed, rinsed well, cut in circles

8 ounce ball Crave Brothers Farmstead Fresh Mozzarella, sliced thin

2 small ripe tomatoes, sliced thin

1/2 cup basil, stemmed, roughly chopped


Preheat oven to 450 degrees.

To make pizza sauce, in a small bowl combine mascarpone cheese, garlic, lemon juice, salt and pepper and mix well. Set aside.

Marinate shrimp by placing in a medium size bowl and tossing with red onion, cilantro, lemon juice, garlic, chili powder, cumin and 1/4 cup olive oil. Place in refrigerator for 20 minutes.

To prepare pizzas, place Naan breads on two cookie sheets or pizza pans. Spread each evenly with pizza sauce. Top each with sliced leeks. Place on upper rack of oven.

Bake pizzas for 10-12 minutes or until cheese is bubbly.

While pizza is baking, heat 2 tablespoons of olive oil in large skillet over medium high heat. Drain marinade off of shrimp and sauté quickly until just pink.

Once pizza is out of the oven, top with shrimp, tomato and basil. Cut each Naan in half or thirds.
