About the Recipe
1 pounds Cream Cheese
½ pound Crave Brothers Mascarpone Cheese
½ cup Roasted Sweet Potato Puree
3/8 cup granulated sugar
2 whole large eggs
2 egg yolks
1 Tablespoon Vanilla
2 teaspoons Ground Cinnamon
¼ cup Sour Cream
Sweet Potato Puree:
¾ cups Roasted Sweet Potato Puree cup
¼ cup Local Honey
3/8 cup Water
1 teaspoon Vanilla Extract
½ teaspoon Ground Cinnamon
Pinch Kosher Salt
Place the ingredients in a bowl and whisk together until smooth.
Whip the cheeses in a mixer with paddle attachment scraper the bowl and add the sugar continuing to mix and thoroughly incorporating the sugar.
Add Vanilla, Cinnamon and Sour Cream and the eggs one by one. Mix until smooth and scrape the bowl to complete thorough mixing. Do not over mix as the eggs will cause the batter to rise. Chill batter for one hour. Spoon batter into molds and bake in a water bath at 250 degrees for approximately 30 minutes. Allow to cool and remove from the molds.
To plate: Spoon sauce on a plate top with Cheesecake and garnish with Graham Cracker.
