Wine Country Muffaletta Crostini

About the Recipe


Sesame seeded baguette bread loaf, sliced into ¼ inch thick diagonal slices 32 slices

Olive oil  2/3 cup

Warm pastrami, thinly shaved  24 oz

Artichoke Mascarpone Hummus, See Recipe Below  2 cups

Muffaletta Olive Herb Salad  2 cups

Crave Brothers Fresh Mozzarella cheese, sliced   16 oz

Micro Greens, to garnish plates  2 cups

Artichoke Mascarpone Hummus

Roasted garlic, chopped fine  4 teaspoons

Artichoke hearts, canned, drained and chopped  2 cups

Almonds, sliced and toasted  1/2 cup

Tahini paste  1 cup

Dry mustard  2 teaspoons

Kosher salt   1 teaspoon

Black pepper, ground  1 teaspoon

Crave Brothers Mascarpone Cheese, softened at room temperature  2 cups

Fresh lemon juice  1/2 cup

Lemon zest, finely grated  2 teaspoons

Fresh parsley, chopped  4 teaspoons

Fresh thyme, chopped  4 teaspoons

Artichoke hearts, sliced  2 cups

Carrots, finely dice  1cup

Celery hearts, finely diced  1 cup

Green olives, finely chopped  1 cup

Kalamata olives, finely chopped  1 cup

Roasted red peppers, finely chopped   1 cup

Pepperoncini peppers, stemmed, finely diced  1 cup

Capers, rinsed  1/2 cup

Olive oil  1/2 cup

Sherry vinegar  1/4 cup

Fresh oregano leaves  2 Tablespoons

Fresh basil, thinly sliced  2 Tablespoons

White anchovy filets, chopped  4 each


1. Generously spray a baking pan with nonstick vegetable cooking oil; arrange the baguette bread slices onto the pan in a single layer. Using a pastry brush lightly brush both sides of each baguette bread with olive oil. On one side of each baguette bread spread a generous amount of the Artichoke Mascarpone Hummus using an offset spatula. Place the baguettes into a 350 degree oven and bake for 6-8 minutes or until the bread is golden and the Artichoke Mascarpone Hummus is lightly browned.

2. To Serve:

1. Arrange a small quantity of the Muffaletta Olive Herb Salad onto each baguette bread slice.

2. Decoratively place the thinly shaved warm slices of pastrami onto each baguette bread slice. Lightly arrange a small amount of Muffaletta Olive Herb Salad over and in between the slices of pastrami. Finish the baguettes by placing thin slices of fresh Buffalo mozzarella cheese in between the slices of pastrami

3. Attractively arrange the baguettes onto 4 decorative serving platters; garnishing each platter with a small quantity of micro herbs. Serve immediately enjoy!

For Hummus:

1. Place all ingredients into a food processor and puree until smooth.

For Muffaletta Salad:

Combine all ingredients, cover with saran wrap and refrigerate for at least 30 minutes. Gently stir prior to serving.
