Caprese Frittata

About the Recipe

Ingredients
8 whole eggs
2/3 cup cherry tomatoes, halved
1/2 cup Crave Brothers Fresh Mozzarella (Perline or Ciliegine work great!)
1/3 cup heavy cream
1/3 cup parmesan, grated
1 ounce baby spinach
1 TBSP fresh basil, chopped
1 TBSP olive oil
2 cloves garlic, minced
1 tsp salt
1/4 tsp ground black pepper
Preparation
Preheat oven to 400.
In a large mixing bowl, add eggs, heavy cream, parmesan, salt and pepper. Mix using a hand mixer or whisk until frothy.
Heat a 10 inch oven safe skillet to medium heat. Add in olive oil, spinach and garlic. Saute for 20 seconds or until spinach has wilted.
Pour in the egg mixture. Add tomatoes and fresh mozzarella.
Cook for 4-5 mins, then turn off the heat and place the skillet in your preheated oven.
Bake for 10-12 mins or until eggs are cooked through.
Allow for frittata to cool slightly before slicing into wedges and serving.
