Mascarpone Asparagus Tarts

About the Recipe


1 sheet frozen puff pastry, thawed

Flour for work surface

2 cups shredded Crave Brothers Farmer’s Rope, Gruyere and Fontina cheeses, mixed

1 ½ pounds asparagus spears, cleaned and trimmed

4 oz Crave Brothers mascarpone

1 Tablespoon olive oil

Sea salt and freshly ground black pepper


Preheat oven to 400 degrees. Roll the puff pastry out on a floured surface, making a 10 X 16 -inch rectangle. Place on a baking sheet lined with parchment paper. Score pastry dough with a fork, one inch from the edges. Bake about 15 minutes until golden. Remove pastry from oven and sprinkle with shredded cheese mixture. Arrange a single layer of asparagus over the cheeses, alternating ends and tips. Brush with oil. Dollop on spoonfuls of mascarpone, and season with salt and pepper. Bake until spears are tender, about 20 minutes.
